Mashed Cauliflower Potatoes
Sometimes I have to sneak good things into Chickadee’s little tummy. Anyone else? Please tell me I’m not alone. Well I found the the yummiest “mashed potato” recipe…that’s well not made from potatoes. Did you know that cauliflower is good for your heart, full of vitamins and minerals, and great for gut health? Just to name a few of it’s benefits. So I had a goal to get some into Chickadee, but to do so I had to change the texture!
Cauliflower Mashed Potatoes was my strategy and she GOBBLED them up. They were a hit with the grownups too and a great substitute for potatoes if you are trying to cut down on your starches.
- 1 medium head of cauliflower
- 1 tbsp of olive oil
- Salt
- Pepper
- *Optional: 2-4oz of cream cheese
- In a microwave safe bowl place a the florets from a head of fresh cauliflower and 1/4 cup of water. Cover with plastic wrap and heat 4-5 minutes until cauliflower is tender.
- Place steamed cauliflower, cream cheese (room temp), and salt & pepper to taste in a food processor and process slowly adding olive oil and 1/2 of the water left in microwave bowl. Process until it reaches desired consistency.
- Serve.
We enjoyed the cauliflower mashed potatoes with baked Parmesan crusted chicken and steamed broccoli (a lot of cruciferous veggies on our plate!).
