Delicious Milk Chocolate Cake with Fudge Icing
An ode to the classic flavor of chocolate.
Baking, like any other craft and art form, is all about discovery and reinvention. As I spend more time in the kitchen, I have begun to experiment with many different flavors and textures created with the simplest ingredients, like when making this Brown Sugar Meatloaf or this Ice Cream Sandwich Cake.
Every now and then, though, I want to go back to my roots and enjoy the simpler flavors I’m used to, and this delicious milk chocolate cake with a fudge icing is perfect for these moments of nostalgia. Chocolate has always been one of the most popular flavors among kids and adults alike, and there’s no saying no to a good slice of chocolate cake. Tiny Prints did a little research and found chocolate to be America’s favorite flavor, with over 50% of adults enjoying the rich, sweet treat over any other flavor, and List Dose also found chocolate to be the number one flavor among cake lovers. It’s a flavor that never disappears from the shelves and cupboards of any bakery, and with this recipe, it can appear in yours as well.
- For the Cake
- · 1 3/4 cup self raising flour
- · 2 cups caster sugar
- · ½ tsp salt
- · 2 tbsp chocolate milk
- · 1 stick softened butter
- · 2 eggs
- · 5 oz evaporated milk
- · 5 oz water
- · 2 tsp vanilla
- For the Icing
- · 6 oz softened butter
- · 8 tbsp cocoa
- · 2 cups sifted confectioner’s sugar
- · 3 oz. evaporated milk
- · 2 tsp vanilla essence
- For the Cake
- Preheat the oven to 350 degrees.
- Grease two 7 inch round cake pans.
- Mix the dry ingredients and the butter in a food processor or mixer.
- Mix wet ingredients separately, then pour it into the processor to be combined as one mixture. Pour the batter evenly into both tins.
- Bake the cakes for 30 minutes or until the top is springy when pressed. (Test with a toothpick)
- For the Icing
- Mix all the ingredients until smooth, and spread evenly on cakes when they have completely cooled.
This delicious, decadent cake is simple enough to make for even the most inexperienced of bakers. It was inspired by a recipe found in the Marks and Spencer cookbook. It is good enough to serve at any party, or just enjoy at home. I hope you enjoy this tasty ode to the classic favorite!
