Strawberry Cookie Recipe

This year Valentines will be a little different….for the past 7 years I spent the day with 26ish third graders on a crazy sugar high trying to keep them from eating any more candy. We would graph conversation hearts and as the boys whispered about who they “liked” and the girls talked about who has cooties! Well this year I no longer spend my days in the classroom, so instead of 26ish, I’ll just have two Valentines, Chickadee and her daddy. But I still want to shower them in sugary sweetness!
In our household strawberries are an absolute favorite. Whether strawberry pie, strawberry shortcake, or simply fresh picked strawberries, I’m always a sucker for that sweet taste! These strawberry cake cookies I whipped up for III and his coworkers, I just added to the list of my favorites.
In interest of full disclosure they are a little more cake like and a little less cookie, but they are delicious none the less. Here is what you need!
Those strawberries are going to need to be pureed….a food processor can work wonders with this task.
- 1 box of Strawberry Cake Mix
- 1 egg
- 1/4 cup of pureed strawberries
- 1/3 cup of oil
- 1/4 cup of milk
- 1 tsp. of vanilla extract
- 1. Preheat oven at 375 degrees
- 2. Mix all ingredients
- 3. Spoon 1 inch circles onto a well greased baking sheet
- 4. Bake for 8 minutes or until the edges start to brown
- 5. Cool on baking rack before icing
- *Instead of icing you could also sprinkle with powdered sugar while cooling.

Now you could easily ice and devour eat these cookies as they are out of the oven, but I wanted them to be a little cleaner around the edges. I used both a circle & heart cookie cutter to achieve this. Then I iced with cream cheese icing and added some Valentines sprinkles before packaging them up to share!
