Cranberry Chicken Salad Recipe

There is this little place in Auburn, Alabama called McAlisters. I hear it has made it to a few other places around America as well :o) Whenever, we are going to or coming from III’s hometown we always stop in Auburn and hit up one our favorite college spots & I usually vote for McAlisters. It reminds me of Sundays in Auburn as we often went here after church. One of my favorite items on the menu is their Harvest Chicken Salad. You see, I LOVE chicken salad…..but not all chicken salad. What I think makes this recipe is the cranberries. They are the perfect touch of sweetness that gets me every time. Unfortunately, there isn’t a McAlisters nearby and so I did what I had to do. I came up with my own version.
- 1 pound of cooked shredded or cubed chicken
- 2 limes
- 1/3 cup of mayonnaise
- 1/2 cup of craisins or dried cranberries
- dash of salt & pepper
- dash of paprika
- 1. Boil or bake the chicken before shredding
- 2. Mix with mayonnaise
- 3. Add the juice of 2 limes
- 4. Pour in the craisins
- 5. Add a dash of paprika
- 6. Salt and pepper to taste
- 7. Refrigerate until ready to enjoy
- **Serve with crackers or on a croissant

Can you substatute the mayo with yogurt or sour cream?
