Mini Candy Corn Cupcakes {in a shot glass}
My class is having a Halloween party in a few weeks and I’ve been brainstorming what I might contribute to the spread…and it will be quite the spread from what I’ve heard :o) Trying to stick with the Halloween theme I thought these candy corn cupcakes would be the perfect treat. And with them being small (in a shot glass) they are perfect for little fingers…
I knew I would need several supplies I don’t keep readily on hand, so I ran by WalMart to pick up everything I would need for this sweet treat. I picked up cupcake mix, candy corn, pumpkin spice, and of course Cool Whip’s new cream cheese frosting {also in vanilla and chocolate}.

The baking is simple since this eye catching treat follows basic cupcake protocol, so let’s spend most of our time focusing on the presentation.
After mixing the the cupcake ingredients I divided the batter in half. One bowl I left the classic yellow cake color, but to the other I added three drops of red food coloring. And now we have orange…
Since I was using mini shot glasses to house these candy corn cupcakes I used a mini muffin pan to cook the orange and yellow cupcakes. Putting these creations together is as easy to 1-2-3.
I used two yellow and two orange mini cupcakes per candle votive shot glass. I pulled apart the cake to help fill the space.
After letting the #CoolWhipFrosting thaw & the cupcakes cool I topped it off with the”knife technique.” Can I be honest here….I licked the knife when I finished. The frosting is delicious. Just the right amount of fluffiness and sweetness.
Last but not least sprinkle with some pumpkin spice & top with a piece of candy corn.
I have to doubt the kids will love them, but they might have to fight a few paws before they are able to enjoy!
