Rolo Chocolate Chip Cookie Cups

I don’t think I had heard of Rolos until 2011…does that give you any idea about the small town bubble I grew up in? I hadn’t heard of Cherry Coke either until I moved to Atlanta & III introduced me. We’re best friends now. Anyways…a friend at work snuck some Rolos into a Christmas treat last year, & I found the chocolate and caramel combination to be the perfect treat!

While “Pinteresting” last week I came across several recipes for Rolo chocolate chip cookies, but they all required making your own dough & frankly with the beginning of school I don’t have the time. I wonder how long I can use the school excuse?
(We’re on week three and going strong!)

So I opted instead to try out the recipe with good ole’ Pillsbury break and bake :o)

I started by breaking each cookie in half & smushing each one into the bottom of a mini muffin tin.
For round two I sat a Rolo on top of each one.

Then I used the other half of the cookies to cover the Rolo. Sounds easy enough, right?
Bake on 350 degrees for about 15 minutes.

My brain didn’t put two and two together and I was a little surprised when the cookie cups sank in on top. However, if I remembered anything from Science class I would have realized that the Rolo would melt down…live and learn. At least is didn’t mess up the taste.

Make sure you let them cool before prying them loose…otherwise they probably will fall apart.
I’m not sure if it is the case with all Rolo Cookies but mine were a little crisp (not in a burnt way) around the edges & gooey on the inside. III and I have been popping seven one every now and then when we need a sweet fix! They are the perfect size :o)
