The Cupcakes I Wish I Could DO OVER

These cupcakes did not turn out they way I had planned. It was my mom’s birthday, and I thought these Strawberry Lemonade cupcakes would be the perfect treat to celebrate.
Could there be a better combination??? I do not think so!


There was inspiration, determination, love, all the important ingredients, but for this baking adventure it did not seem to matter.
Let’s just say neither myself or the cupcakes could “hold it together.”
And for that reason, presentation…

The only good news of this impending disaster, was the reminder that I could always have a DO OVER. 
And mark my words

They will be prettier….next time

 They will will not be described by the phrase “don’t judge a book by it’s cover”….next time 

Their appearance will entice any consumer….next time

I won’t make this costly mistake…next time

I reviewed my baking adventure and have pinpointed the exact
 moment I wish I could do over:

I was in a hurry you see, about to go out of town. So I didn’t have time to make the fabulous sounding icing from How Sweet It Is. So I just added cut strawberries to Pillsbury’s Strawberry Icing (and a little bit of cream cheese)…the water in the strawberries didn’t help in keeping the consistency of the icing. That combined with the Alabama heat…Houston we have a problem.

Melting ensued. 

Who knew adding juicy strawberries to icing would create a liquid disaster of a mess???

The problem was ALL in the icing. So next time I’ll stick to the delicious cake part of the recipe like before, but I’ll closely follow the butter cream icing recipe from How Sweet It Is.

“DO OVER” Strawberry Lemonade Cupcakes 
according to How Sweet It Is

Cake Recipe (worked out marvelously):

1 cup of sugar

6 tablespoons of butter
2 eggs
2 teaspoons of vanilla
 1 1/2 cups of flour
1 1/4 teaspoon of baking powder
1/2 cup of milk
grated zest of 2 lemons
01. Mix sugar, butter, and eggs until creamy, then add lemon zest & vanilla.
02. Combine dry ingredients.
03. Add half the dry ingredients to mixture until combined.
04. Add milk & mix.
05.  Pour in the rest of the dry mixture & combine.
06. Pour in cupcake liners, drop in cut strawberry.
07. Bake 20-25 minutes on 350 degrees.

 (I suggest you don’t make any of your own “quick fix improvements,” unless you are a pro baker. Otherwise you will be having to try again just like me!)

  • I love your honesty and sharing of failures along with all of your successes. In a world where every food photo is so perfectly composed, it is refreshing to see that not every experiment comes out “photo ready.” But even though the icing was a little less than ideal, I bet they tasted wonderful! :)
