Spaghetti & Meatballs

**I’m cooking this tonight, so I thought I’d share again :)

Did you know that if you pay attention you NEVER have to pay for noodles? There always seems to be a sale that matches a coupon, and therefore the store ends up giving you the pasta! For this very reason, I must admit I have a small pasta noodle stockpile. I promise I’m light years away from the folks on Extreme Couponing, but in the pasta department I’m gaining speed.

So, for this month’s Cookbook Challenge I knew which cookbook to check out. PASTA (that is actually the title).

When I reached Spaghetti & Meatballs I knew for III it would hit the spot. Plus, meatballs are a path I’ve yet to venture down, so I decided to give them a try.

Here are the cast of characters (minus parsley & an egg)

1/2 c. breadcrumbs, 1 3/4 c. ground beef, 1 chopped onion, 1 egg, 4 tbsp parsley,
all purpose flour, 5 tbsp olive oil, 1 can strained tomatoes, 1 can tomato paste, spaghetti noodles, salt/pepper, Parmesan cheese


Combine the breadcrumbs, beef, onion, egg, and parsley in a bowl & season to taste with salt & pepper. Spread out the flour on a plate. Form meatballs from mixture and roll in flour.

Heat oil in a skillet, add the meatballs, and cook over medium heat, stirring and rotating frequently, for 8-10 minutes, until golden.

Add the strained tomatoes and tomato paste and cook for an additional 10 minutes until the sauce is reduced and thickened.

Meanwhile, boil the noodles.

After draining the noodles well add to the meatballs & sauce. Serve topped with Parmesan cheese & side with cheesy bread.

I have to admit, I think this was my best addition of spaghetti yet; III agrees & is looking forward to his meatball sandwich for lunch!

Give it a try…meatballs aren’t as tough as you may think. Oh, and for a “healthy” rendition, try turkey meatballs.
