I’m popping in today to share a quick recipe for easy stuffed bell peppers. It’s been a crazy week so mama needed an easy dinner and this fit the bill! We had family in town over the weekend and had served both nachos and roast & carrots over rice, so I had some leftovers to work with. I actually use this same mixture to make zucchini boats as well so I guess it’s multi-purpose.

Easy Stuffed Bell Peppers

  1. 5 bell peppers (any color)
  2. 1 pound ground beef (cooked and drained)
  3. 1 cup of brown rice (cooked according to package instructions)
  4. Olive Oil
  5. 15oz can of black beans
  6. 15oz can of corn
  7. 1/2 cup salsa
  8. 1/2 onion, diced
  9. 1 tsp cumin
  10. 1 tsp chili powder
  11. 3/4 cup of cheddar or taco cheese
  1. Preheat the oven to 400 degrees
  2. Cut the tops off the bell peppers and hollow out the insides. Then dice up ONE of the bell peppers. Place the remaining four bell peppers in a greased baking dish and drizzle with olive oil.
  3. In a skillet oven medium to high heat, saute diced onions and pepper.
  4. Once tender add in cooked beef, brown rice, black beans, corn, salsa, cumin, and chili powder.
  5. Stuff each pepper until full and then top with cheese.
  6. Cover with aluminum foil and bake for 35 minutes. Then remove foil and bake an additional 5 minutes. If you would like the tops a little crispy you can broil for the remaining 5 minutes.
  1. If you like a kick, add a little Tabasco sauce to the mixture as well!
A Step In The Journey
So, as much as I would like to say that my kids would eat this up in stuffed bell peppers, it just isn’t true. So to make theirs a little more kid friendly I would serve it over blue corn tortilla chips or even make a quesadilla using the mixture. They are still getting lots of good veggies!

I’m NOT an expert when it comes to making toddler meals, but I am two kids in and working on eating with #3. What we feed our children has come a long way from the 80’s when frozen chicken nuggets, mac n cheese, and applesauce were king. A lot of this change is simply from the passing of time which hopefully brings knowledge…the idea of when we know better, we do better. It’s also from folks obsession with taking pictures of food and placing it on social media. And partly from the “real food” revolution (paleo, whole30, etc.). Now I won’t pretend to be a person who has ever done whole30, and my kids get churros at Costco….but day in and day out we find balance with meals like these below. So if you are in a rut of PB&J and a fruit cup, here are some simple breakfast and lunch ideas from an average mom doing the best she can! 


I think it’s important to always have some good protein at breakfast time. We traditionally think meat, but protein is found in cottage cheese, greek yogurt, and eggs too! Costco has great prices on organic greek yogurt, organic eggs & organic raw honey. And the Kirkland brand organic maple syrup is AMAZING. I didn’t put cereal among my ideas, but I do let them have it on Thursdays. They don’t go to preschool on Thursdays so I don’t have to worry about them getting hungry and bugging their teachers at 9:00am. They bug me for a snack instead :)

My kids LOVE hummus so I like to mix in all kinds of veggies. They also like dipping carrots and cucumbers in hummus. Costco has some yummy veggie muffins if you aren’t up for making your own. They are in the refrigerated section. We also eat a lot of dinner leftovers for lunch. The plates and bowls are from IKEA. We have two sets and use them constantly!

Three More Months with Poppy | 6 Months Old


Our Sweet Poppy,

Each time I write I am in awe of how quickly time is passing. You are just the most joyful little baby and we are so enjoying our time with you! You smile every time you see our faces; the smile creeps up your face and when it reaches your mouth it lights up the room. Sometimes I am truly worried my heart might explode. Oh, sweet girl thank you for being the most perfect baby #3!


At your four month appointment you weighed 13lb 11oz and were 25.75 inches long. Long and lean. You are wearing size 2 diapers and 6 month clothes. You are starting to be more interactive and reach for things like toys, your dress and our fingers and of course they all go straight to your mouth. Maybe it was because you were teething! You got your first tooth October 24th and your second followed a week later on November 4th. Those two bottom teeth are the cutest. We celebrated your sister’s 4th birthday and you met your Great-Grandmother (Pop’s mom). She, as is everyone else, was smitten.  We became brave enough in early October to let you stay in the church nursery. We were a little nervous because you aren’t a fan of the bottle, but you did great (wouldn’t drink anything, but great otherwise!). You also started napping in your nursery this month. You like it dark and the white noise turned up and being still swaddled you sleep like a champ. I think you will be rolling over soon though. Finally, we celebrated your first Halloween. You were a banana split. EVERYONE was a fan!


At 5 months we finally moved you up to your room to sleep at night (November 13th). As I’ve mentioned before we are soaking up all the babyness and I think keeping you in our room a little longer was part of that. Since you rolled over for the first time, back to tummy, on December 5th you dropped your swaddle and you handled it like a champ. You fussed for about 15 minutes and then went to sleep, never looking back! A few days later you realized you preferred your tummy and have been sleeping that way whenever you are in your crib. You are still sleeping through the night and your mama is very grateful. I have to be on my A game to mother you three littles and sleep is crucial. Around this time you also found your feet and they are great entertainment in the car seat. You are still eating 4-5 times a day (no solids yet), although you are often distracted by your big brother and sister. You want to play with them so badly. They smother you with toys and love. Sprout loves sharing Bunny with you and Chickadee always gets a kick out of reading to you. We hosted Thanksgiving this month, so you got lots of snuggles from family and we also enjoyed a trip to the mountains with our small group. 


And now you are 6 months. Happy Half Birthday! You partook in so many Christmas festivities this month. And the weather matched the season this year. It snowed 6 inches down here in the deep south. You didn’t play in it much but you definitely experienced the magic! Other festivities included Christmas train riding at Stone Mountain, the lights at the Botanical Gardens, the Christmas parade downtown (that one you didn’t really like, those bands were a little loud!), and of course you met the BIG guy in red. We traveled to Alabama for Christmas and you had the BIGGEST blowout ever on the way. I’m pretty sure there was one every leg of the trip. You made the transition from one place to the next with ease though. It was a JOY to celebrate our Savior’s birth and you be there! We told everyone about your impending arrival last Christmas, so it was kind of full circle. I think you have hit a growth spurt as you started waking up again around 4:00am to eat. I am keeping perspective and cherishing some quite time together with you. We had our New Year’s in London party again and you rocked midnight in London with the rest of us. You are getting stronger and stronger and are pushing up when on your tummy. You also can sit up for a few seconds. I love watching you interact with the world. The sound you hear when you scratch your finger on a bumpy fabric, hearing a laugh and realizing it’s your own, using your legs to bounce in the exersaucer and making music with your feet on the piano mat. You are rarely fussy and all it takes to calm you down usually is picking you up. Finally, I think you are starting to ease up on your bottle strike. We are all happy! You have established a routine with your naps, usually around 9:00, 1:00 and 5:00. 


We have so enjoyed these past 6 months with you and cannot wait to see how you continue to grow and develop! We pray you continue to be filled with God’s light and share your joy with all those you see. May you love like Jesus sweet girl.

Happy New Year & Ham Sliders

Happy New Year! How is 2018 treating you so far? We kicked it off (London style) with 14 other families and about 25 kids under 5. It was our 3rd Annual New Year’s in London Party. It always starts about 4:00 and we toast New Year’s with our friends in London at 7:00 our time. Yall I feel like it is one of my best ideas. It is always so much fun, a little crazy, and we are in our PJs by 8:30. That is my kind of party! I’ll do a post about it one day.

I realize I haven’t posted in about 3 months and I’m sorry. I feel like I am constantly catching up on this little blog now that I am wrangling three kids. I have managed to get about an hour when everyone is napping/resting but it seems to get filled up with cleaning, dinner prepping, bible study and episodes of the Crown (please tell me you are watching too!). I do take lot of pictures and always have good intentions to share with you. I can promise I’ll be back to share about Poppy this week. Here is our Christmas card picture. The kids are growing so fast!


Poppy was SIX months old on Sunday. How can it be? She is such a JOY and we are soaking up all of our days with her and her brother and sister!

So for our New Year’s party we knew we had lots of mouths to feed both big and small. We settled on making Ham and Cheese sliders. They are a regular menu item around here and are always delicious. Plus they are easy to make and can feed a crowd. I first found the recipe in a Better Homes & Gardens recipe edition at my mother in laws and have only tweaked it slightly to make it our own. 

You will need King’s Hawaiian Rolls (everything tastes good on those!), sliced ham, white american cheese and Laughing Cow’s garlic and herb soft cheese spread. Spray a baking dish or pan with non-stick spray of some kind and then layer in this order…bottom of the Hawaiian rolls, sliced ham, white american cheese. Then spread the garlic and herb spread on the top of the rolls before placing them on the slider.






Then poured over the top is melted butter, Dijon mustard, garlic & parsley. You can add more or less of these ingredients depending on your liking of each. For 12 sliders I use 4 tbsp of butter melted, 1tsp of chopped parsley, 1 tbsp minced garlic and 1 tbsp of Dijon mustard. Mix it together and pour over the top. 



Finally, cover with aluminum foil and bake at 350 degrees for 20 minutes. Then uncover and bake for another 5 minutes. These are incredible, however if you are 4 or under like the little ones in our house, you might prefer just melted butter on top of yours!

  1. King's Hawaiian Rolls (12 count)
  2. 5 slices of deli Ham
  3. 4 slices of White American Cheese
  4. Laughing Cow Garlic & Herb Cheese Spread
  5. 4tbsp melted butter
  6. 1 tbsp minced garlic
  7. 1 tbsp Dijon mustard
  8. 1 tsp parsley
  1. Preheat the oven to 350 degrees.

  3. Then layer ham and American cheese.
  4. Spread the garlic and herb cheese on the inside of the roll tops and place on the sliders.

  6. Bake for 20 minutes. Remove foil and bake for another 5 minutes.

Another great recipe with these Hawaiian rolls are these hamburger sliders you can bake in the oven. I also love using them for meatball sliders. You can’t go wrong! See you in a few days for a Poppy update!

Poppy, the Past Three Months

one week

Dear Poppy,

Oh sweet baby girl. We are soaking you in as much as we possibly can! You are the absolute sweetest baby and we are all smitten. I can’t express how thankful we are that you made us a party of 5. You are so mellow and are happy to be along for the ride. You haven’t had a rough night since night two in the hospital which has made it easy to keep you in our room. Upstairs seems so far away, so we have kept you close. And I can count on my two hands the number of times we’ve had to bring you down from the crazy cry in these past three months. Your sister and brother smother you to pieces. They love holding you, giving you their toys, and making you smile. Basically, the last three months have been better than imagined!

Hospital Collage

From the beginning you have been an excellent sleeper. Even on baby #3 I was the crazy mom that woke you to nurse the first few weeks until the pediatrician told me you were gaining weight like a champ and I should let you sleep. At your 2 weeks appointment you weighed 7lb 8oz and by one month you had gained almost two pounds (9lb 6oz). Around one month you were sleeping for two 4 hour stretches at night. You only wore your newborn clothes for a few weeks and moved into 0-3 months pretty quickly! You finally “woke up” around 9 days and we got to see your sweet eyes a little more. Some of my favorite memories from your first month are Chickadee she’ll get your diapers “because I’m the big sister” or she’ll cover you up in the blanket “because I’m the big sister.” She took her second promotion seriously. And Sprout to this day only refers to you as “my baby Poppy!” 

One Month Collage

By the time you were six weeks old you were sleeping 5-6 hour stretches at night…I could fee you about 10:30 and you would make it to about 5:30, still a stretch, but some might call that sleeping through the night. By 8 weeks though you were sleeping 8 hours pretty consistently. Mom had to adjust a little bit, but once she saw you had gained 4.5 pounds since you were born she knew sleeping through the night wasn’t hurting you at all. At your two month appointment you weighed 11lb 7oz and were 23.25 inches long! Growing like a weed. I feel around the two month mark was also when you started to really “look” at us and study our faces. When you hear our voice you have started smiling and you have no idea what that does to a mama & daddy’s heart. If I knew how to type emojis I would give you all of the “heart eyes!” You began sucking on your fingers a lot to self soothe and I’ve been trying to get you to use a pacifier instead, you give in most of the time! You also rocked your first road trip over Labor Day. We went to Oneonta for the long weekend to visit Bebe & Pop. You were loved on by many and enjoyed lots of snuggles and a few lazy lake days. You can get used to those! 

Two Month Collage

And now sweet girl you are three months old. Goodness, where does the time go. Those newborn snuggles are hard to give up, but your HUGE smile is a pretty close substitute. You are quite chatty these days as well. Lots of babbling and cooing and smiling. You are now sleeping about 10 hours at night pretty consistently and we have plans to move you up to your nursery soon. You took another road trip down to Fairhope, AL where all 5 of us bunked up in a hotel room at the Grand Hotel. You slept by the pool and got lots of compliments on how cute and chill you were. We then headed over to Bay Minette to visit with Nana & Paw Paw and also were able to spend a lot of time with your great grandmother, Nannie. You are a champ in the carseat and for that I am so grateful because we are on the go a good bit. You nap mostly in the swing and like watching the mobile. When you do get fussy you like being snuggled up next to me in the Ergo or laying in your daddy’s arms. We truly are all smitten with you.

We are so grateful that God saw us fit to be your parents. You are a delight, pure joy sweet girl. As our family grew so did our hearts and we are thankful that our love continues to multiply. We love your fiercely Poppy and pray that you love others like Jesus, just as your namesakes do/did!
